When I was 19, I travelled around Thailand and still vividly remember the street markets of Chiang Mai. One evening, I stumbled upon a small food stall where I ordered a chilli and Thai basil stir fry. I had no idea what I was in for. The first bite was like an explosion of flavour—fiery chilli, thai basil, and tender pork, all perfectly balanced. My taste buds were quite literally lit up, in the best way possible. This dish sparked countless food adventures since and remains etched in my memory as one of the most unforgettable meals I’ve ever had.
Perhaps slightly influenced by a very recent trip to Florence, I think it would be Lasagne with a fresh crisp mixed salad and stone baked garlicy bread to soak up all the sauce and olive oil/balsamic. It’s the taste of italy on a plate and they had so many variations: some veggie orientated with pesto, mozzarella combinations and other more classic with intense ragu bolognese sauces. Not a practical choice for a desert island but delicious nonetheless.
I’ll soon be heading to Spain and particularly the vibrant city of Barcelona. I can’t wait to explore the bustling markets like La Boqueria, where every stall overflows with fresh produce, seafood, saffron, paprika and olive oil. The colors, the energy, and, most importantly, the flavors are unforgettable — from ripe tomatoes and fragrant olive oil to the salty, smoky notes of jamón ibérico. I’m excited to immerse myself in Catalan cuisine, discovering the secrets behind iconic dishes like paella and tapas, and bringing that bold, Mediterranean freshness to some of DishUps next creations.

Sri Lankan prawn curry: I remember sitting by the coast in the south of Sri Lanka enjoying this dish. The prawns were so fresh, cooked in a coconut milk base infused with curry leaves, mustard seeds, and a blend of local spices. Paired with fluffy rice and a side of sambal, it was an unforgettable taste. Washing it down with a local Lion beer also added to the occasion!
It would have to be a classic roast beef with all the trimmings. Perfectly roasted, juicy beef with a crispy, herb-crusted exterior, paired with roast potatoes, fluffy Yorkshire puddings, and a rich gravy. Add in buttered vegetables, roasted carrots, and parsnips, and don’t forget a dollop of horseradish sauce for that little kick.
Next on my list is Bali, Indonesia. The island’s vibrant food scene is a beautiful blend of traditional Balinese flavors and fresh, local ingredients. I can’t wait to explore it more.
Parenting, farming, having a beer or 2 or 3 with friends.

One of the best meals I’ve ever tasted was in Mexico, sitting at a small beachside restaurant with the sun setting over the Pacific. The ceviche was unforgettable — freshly caught fish marinated in lime juice, mixed with tomatoes, onions, chilli and coriander. Accompanied with fresh Guacamole. Perfection!
It’s another classic crowd pleaser from my side as it would have to be a perfectly cooked ribeye steak. I’d pair it with a rich, creamy dauphinoise potatoes and plenty of vegetables. Of course, I couldn’t forget the peppercorn sauce.
I am trying to plan a trip to Peru. I have been wanting to explore the Inca Trail and Machu Pichu for years and have heard great things about the food there. I’m especially excited to try the ceviche and traditional lomo saltado dish.
Sailing and travelling as much as I can.
